Who wants some healthy meatloaf. I was never a huge fan of meatloaf but this recipe will knock your socks off. It uses nothing but the best healthy ingredients and is sure to be a big hit with the entire family. They will question you if it’s really healthy. Here’s what you need below!

  • Glass loaf pan
  • Mixing Bowls

Ingredients
  

  • 1 cup soaked lentils, (You can also use canned lentils drained and rinsed but it’s not as healthy)
  • 3/4 lbs grass-fed, organic ground beef
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell red peppers
  • 1 tbsp minced garlic
  • 1 package frozen organic spinach, thawed and drained
  • 3 tbsp Bragg Liquid Amino
  • 1 large organic egg, beaten until foamy
  • 1/4 tsp black pepper

Instructions
 

  • Preheat the oven to 350 degrees F (180 degrees C).
  • In a large bowl, combine all ingredients and mix well.
  • Spread the meatloaf in a nonstick loaf pan (preferably glass).
  • Bake until meat is well done about 1 hour.
  • Remove from the oven and let stand about 2 to 5 minutes.
  • Top with organic ketchup if you like and serve with a nice big salad! Enjoy!
