Immune Boosting Veggie Soup

This creamy soup recipe has many great ingredients to boost your immunity and detox your body. Among other healthy ingredients this soup includes broccoli and arugula which are great vegetables that detox your liver and support your health! Research suggests that cruciferous vegetables may support immune health by reducing the risk of certain cancers, such as gastric and prostate cancers, as well as by exerting anti-microbial activity, which may protect against gastrointestinal infections.
This soup also includes ginger for taste as well as it's health benefits. Research has shown that ginger may inhibit certain inflammatory conditions such as arthritis, and other immune-related conditions, including allergies, asthma, and colds. There are many more immune boosting foods too plus the taste will not disappoint! You can eat it hot or cold too, not many soups that can do that! What you need to make it is below.

Cook Time 30 minutes
Total Time 40 minutes
Course Drinks, Soup

Ingredients
  

  • 1/2 avocado
  • 8-10 broccoli clusters with stems about an inch long
  • 1/3 of white or red onion
  • 2 hand fulls arugula or spinach
  • 1 tsp sea salt (add more if needed)
  • 1 tbsp Apple Cider Vinegar
  • 1/4 tsp red pepper flakes (about 1/4 teaspoon) or to taste
  • Juice from half a lemon
  • 1 inch minced ginger root
  • 1 cup purified water

Instructions
 

  • Lightly steam the broccoli and remove from heat when bright green.
  • Then boil onions in water until just soft.
  • Blend cooked broccoli, onions and all the other ingredients in a blender or food processor.
  • Add 1/2 cup water and blend some more.
  • Add more water to reach your desired consistency
  • Add any additional salt to taste.
  • Garnish with cooked onion or broccoli if you like.
    Enjoy hot or cold!
