Ingredients
  

  • 3 organic eggs
  • 1 cup coconut oil
  • 2 cups of brown sugar or you can substitute with 1-2 cups of stevia
  • 2 cups peeled and grated zucchini
  • 3 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 cup raw almonds
  • 3 cups of almond flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1/4 tsp baking powder

Instructions
 

  • Stir together eggs, oil, sugar, zucchini. Sift together flour, soda, salt, cinnamon, and baking powder. Add to the zucchini mixture. Stir in vanilla and nuts. Bake at 325 degrees for 1 hour. May need 15 minutes more. Cool completely if you intend to freeze.
