Equipment

  • Immersion blender
  • Jar

Ingredients

  • 1 cup avocado oil
  • 4  whole egg yolk (fresh organic)
  • 4 tsp mustard
  • 4 tsp apple cider vinegar (use organic with mother)
  • 4 pinch  pink Himalayan salt
  • 4 pinch black pepper

Instructions

  • Choose a mug, or wide jar that can comfortably accommodate a blender.
  • Carefully add the egg yolk to the container, followed by the vinegar, mustard, and salt. Avoid blending at this stage.
  • Slowly pour the avocado oil over the ingredients without blending.
  • Gradually lower the hand blender all the way to the container's bottom, ensuring it makes contact. Start blending at medium-high power without moving the blender for about 20-25 seconds. The mayo will begin to change color.
  • Raise the blender slightly, keeping it submerged. Then, lower it back to the bottom and repeat this up-and-down motion until the mayo is consistently formed.

NOTE

  • If the consistency is too thin, consider incorporating 1 tablespoon of boiling hot water while continuing to mix.
