Who loves a good pot of chili? I do! This recipe uses only the finest ingredients for a great pot of super, healthy chili. Make it tonight for the family. I’ll give you the super healthy version made from fresh ingredients and the convenient version that is quick to prepare but uses canned goods. The entire recipe including cook and prep time should be under 60 minutes

Equipment

  • Sauce pan

Ingredients
  

  • 1/2 lb extra lean, hormone-free ground beef
  • 1 diced large onion
  • 1/2 chopped green pepper
  • 1-19 oz can of red kidney beans or 2 cups of red kidney beans soaked overnight
  • 1-14 oz can whole peeled chopped tomatoes or 3-6 chopped organic tomatoes
  • 1-5 oz can tomato paste or add another 1-2 organic tomatoes
  • 1/2 cup water
  • 1 cup nutritional yeast (I like the brand from Bragg’s)
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp stevia
  • 2-3 tbsp chili powder

OPTIONAL:

  • 2-3 jalapeno peppers

Instructions
 

  • In a large saucepan, cook beef, onions, and green pepper over medium-high heat until meat is browned. Stir in remaining ingredients. Cover and simmer for 40-45 minutes.
