Healthy Chicken Quesadillas

Do you enjoy the zesty yet mellow taste of chicken quesadillas? Living in Mexico I’ve grown to enjoy quesadillas. every now and then. Now you can make your own at home with this tasty recipe. I’ve adapted it to make it as healthy as possible for you.

Equipment

  • Non-Greased Cookie Sheet

Ingredients
  

  • 2 cups Mexican flavored cheese, shredded (Try to get organic)
  • 6 corn tortillas
  • 1 cup cooked hormone-free chicken, chopped
  • 1/2 cup tomato seeded and chopped
  • 2 tbsp green chilies, chopped
  • Fresh cilantro, chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Sprinkle 1/3 cup of the cheese evenly over half of each tortilla. Sprinkle remaining ingredients over cheese. Fold tortillas in half overfilling. Place on an un-greased cookie sheet.
  • Bake 5 minutes, or just until cheese melts. Serve quesadillas whole, or cut each one into 3 wedges.
    Note: These can also be grilled on the barbecue if you prefer.
