Healthy Chicken Quesadillas
Equipment
- Non-Greased Cookie Sheet
Ingredients
- 2 cups Mexican flavored cheese, shredded (Try to get organic)
- 6 corn tortillas
- 1 cup cooked hormone-free chicken, chopped
- 1/2 cup tomato seeded and chopped
- 2 tbsp green chilies, chopped
- Fresh cilantro, chopped
Instructions
- Preheat oven to 350 degrees.
- Sprinkle 1/3 cup of the cheese evenly over half of each tortilla. Sprinkle remaining ingredients over cheese. Fold tortillas in half overfilling. Place on an un-greased cookie sheet.
- Bake 5 minutes, or just until cheese melts. Serve quesadillas whole, or cut each one into 3 wedges.Note: These can also be grilled on the barbecue if you prefer.
